Stuffed Shells and a Camera

My camera just flopped out on me… all the more reason to get a new one, which is where I am headed!

Before I leave you, I wanted to share my dinner last night.

Ah, I’ve been craving these ever since, I saw Jenna’s and Heidi’s posts. I didn’t use a recipe, but if you want to make these, I suggest these girls- Jenna’s (dairy-free!) or Heidi’s (vegetarian)- you can easily add meat if you’d like. This dish is relatively quick and super simple to make, and it even looks elegant enough to serve to guests.

┬áMy special guest was my niece, Kaylie- hey kids are tough critics. My shells were stuffed with spinach, onions, and don’t freak out on me- anchovies. You can’t taste them and they add amazing flavor! Kaylie had no idea. I told her after…hehe.

She fired back with, “Auntie, I eat them straight out of the can…”

Yikes, kid. She got me.

(This was about the time my camera died.)

The night was capped off with David Lebovitz’s Best Chocolate Chip Cookies. Man’s a pastry genius. Check out his blog for great eats/stories.

I’m headed out into the world for a camera. Any suggestions? I was thinking a Canon Rebel…

I have made stuffed shells, but it has been a while and they didn’t look this good (and they didn’t have anchovies).
